A quick Thai recipe for a deliciously easy curry using our pre-made paste.
- In a medium pan, heat 3 tablespoons of sunflower oil over high heat.
- Sauté your choice of Green, Red, Yellow, or Massaman curry paste until fragrant, stirring frequently.
- Add 1 can of coconut milk along with your choice of meat, fish, or vegetables.
- Cook until the oil begins to separate and rise to the top.
- Add 2 heaped teaspoons of white sugar and 3 tablespoons of fish sauce, or ½ teaspoon of salt if making a vegan version.
- Stir well and simmer over medium heat for 5 minutes.
- Add bamboo shoots and pea eggplants, and cook for 1 more minute.
- Add extra fresh chilli to taste.
- Reduce the heat and serve hot with jasmine rice.
As a marinade…
- Choose your preferred meat, fish, or vegetables.
- Generously coat with the paste and let marinate in the fridge for at least 2 hours.
- Grill or bake as desired.
