Crazy Gaeng Curry

A quick Thai recipe for a deliciously easy curry using our pre-made paste.

  1. In a medium pan, heat 3 tablespoons of sunflower oil over high heat.
  2. Sauté your choice of Green, Red, Yellow, or Massaman curry paste until fragrant, stirring frequently.
  3. Add 1 can of coconut milk along with your choice of meat, fish, or vegetables.
  4. Cook until the oil begins to separate and rise to the top.
  5. Add 2 heaped teaspoons of white sugar and 3 tablespoons of fish sauce, or ½ teaspoon of salt if making a vegan version.
  6. Stir well and simmer over medium heat for 5 minutes.
  7. Add bamboo shoots and pea eggplants, and cook for 1 more minute.
  8. Add extra fresh chilli to taste.
  9. Reduce the heat and serve hot with jasmine rice.

As a marinade…

  1. Choose your preferred meat, fish, or vegetables.
  2. Generously coat with the paste and let marinate in the fridge for at least 2 hours.
  3. Grill or bake as desired.
